Kathy is a plant-based nutrition researcher, speaker, writer and educator who specializes in sustainability. She is currently adjunct faculty for the University of New England graduate program in applied nutrition, and previously served six years as instructor and lead researcher for the T. Colin Campbell Center for Nutrition Studies that offers the renowned plant-based nutrition certification course through eCornell.
Kathy is co-founder of SustainableDiet.com, which supports a successful transition to a whole food plant-based diet for health. She also serves on the Board of Directors for P-POD, the Plant-based Prevention Of Disease conference, an accredited program for health professionals.
Her upcoming book, Climate Party! is all about the connection between our food choices, climate change and what we must personally do about it.
